| Abstract | 本发明涉及食品腌制领域,具体为一种快速腌制入味锅,具有锅盖和锅体,锅盖扣合于锅体上,在锅盖与锅体扣合部位设置密封圈,锅盖顶部通过管路连接真空泵。为了加速腌制速度,增加腌制的效果和口感,本发明快速腌制入味锅,其原理是把腌制品和辅汤料混合在一起放入带有密封的锅内,进行抽真空,在密封锅内进行物理反应,在锅内的环境达到真空时,气压降低,水的沸点温度降低,腌制品和辅汤料混合在一起进行正常室温煮沸,在10-20分钟后就可以达到3-4小时的效果,而且口感更加特殊。 |
